A Stove-Side Chat with Chef Tony about "Ja Ban Bae" Tasting Menu

The night before the "Ja Ban Bae" tasting menu, Chef Tony was spending a late night in the kitchen making preparations. We started chatting, and very quickly realized that this would make a fantastic candid interview.


Here we present the recording, straight from the stove-side. A good portion of the conversation took place in Mandarin Chinese, but we got English subtitles for you!
